Just a random photo. 

I want to be her in this picture...

Living in a resplendent yet rustic apartment in a sophisticated downtown city bustling around while the snow silently falls in all its meticulous grandeur. My apartment would smell like apples and cinnamon and I would have flowers everywhere along with ostentatious art and a bookshelf overflowing with all different kinds of books. That sweater will be 100% cashmere and I'd be wearing Chanel Chance perfume, my hair would just be freshly washed and smell like rosemary and eucalyptus. I'd be drinking green tea or Chinese oolong and it'd be around 4 in the afternoon...after my tea and perusing the TV I would be getting ready for a night out on the town. 
Or maybe I would be having a dinner party and everyone would be coming at 6pm and I'd have to start on dinner soon...roast chicken with red small potatoes in a dill & garlic sauce, salad on the side and my garlic/sun-dried tomato/corn muffins. ;)

Alright...so I know I have kept saying on and on the last few posts that I need to share some recipes but this time, I am actually going to share a recipe! This is from one of my new cookbooks called Giada's Kitchen - by, you guessed it...Giada De Laurentiis. I saw this recipe {and the picture} and my mouth started watering. It sounds absolutely delicious! I am definitely going to try this recipe out soon. Would be perfect for a little snack throughout your day or as a side to dinner or something. 
I hope everyone is having a lovely Friday morning so far regardless {8:30am here} - we finally got some rain {and thunder!} after a bit of a heatwave and the heat has finally broken. It's gorgeous out there - bright blue sky, everything looks so green...some remnants of rain drops on my window. Love it. :))
Anyways! Here is the recipe!

Garlic and Sun-dried Tomato Corn Muffins
"I love corn muffins, so I'm always looking for new twists on the old standby, which can be kind of bland. These have the surprise of little flecks of sun-dried tomatoes and tender corn kernels, and the garlic makes hem so rich they don't need butter or another topping."

Makes 16 Muffins

Ingredients
2 {8-1/2 - ounce} packages corn muffin mix, such as Jiffy
2/3 cup diced sun-dried tomatoes {from an 8-ounce jar}
2 cups frozen corn kernels, thawed
3 garlic cloves, minced
2/3 cup buttermilk
2/3 cup sour cream
2 large eggs beaten

Directions
Preheat the oven to 375F. Insert paper liners in 16 muffin cups or grease the tins. 

In a large bowl, combine the corn, muffin mix, garlic, and sun-dried tomatoes. Stir to combine. Mix in the buttermilk, sour cream, and eggs and stir just until combined. 

Spoon the mixture into the muffin tins, filling up the cups about halfway. Bake until golden brown on top and a toothpick inserted into the middle of a muffin comes out clean, about 15 minutes. 


How refreshingly simple! 
And don't they look just delicious?! 
I am definitely going to be trying this recipe out soon {just need the muffin pan thinger} and I will probably add another clove or two of garlic since I loooove garlic. You can never have too much garlic - bad for the breath but good for the heart. ;))

I was going to write something else but totally forgot what I was going to say. Lol. 
Oh, that's right...I remember! I am going to try and pick themes each week for the blog. One that I am toying the idea with is "Italy Day". I love everything about Italy and decided I will share a bunch of Italian recipes {specifically from Giada's cookbooks since there are so many out there - new twists on old classics too} as well as share movies that are Italy related...share books that are...things like that. I need to plan this a little more thoroughly so I'm not all over the place but regardless...stay tuned. ;) 
I have more recipes on the way! Need to also pick up the new Everday Food magazine - looks like there are some delicious recipes in there for their Fourth of July issue!
