::random:rambling::

Wow. It has been a crazy past few days. 
Travis and I have been packing like crazy the last few days and I have been studying like mad too. I have getting the hang of what I am learning which is a bonus...I guess I just need to focus more as the last course I did I was not paying attention because so much was going on. Or rather, is going on. 

I am so very excited for moving - just three days away! THREE!! Travis is quite excited as well. Huge beautiful big windows, lots of space, TWO bathrooms, TWO bedrooms! TWO WALK-IN CLOSETS!! Wow! I am excited for the walk-in closets as you can tell. ;) 

Today is Monday and it is a rainy Monday - we planned on picking up our key today and moving some stuff in but...rain! Like I said...so it will be more packing. Wow, we did so much packing yesterday. I feel quite accomplished! 
Anyways...here is my life in the next few pictures. Thought I would share with you. :) 

Oh, and my birthday is coming up!! I almost totally forgot! Hahaha! 
Oh annnnd...I have been losing some weight as well which I am excited about. Slow and steady wins the race! I realize this now!! <3 font="" nbsp="">

Growing up we never had a lot of processed foods on our plates when we sat down for breakfast, lunch or dinner. 
Of course there were times where my Sister and I would lament on how we want chicken nuggets and Kraft dinner because all our friends were eating it. 
To be quite honest, looking back I am glad that my parents wouldn't allow it into the house. 
I'm not saying that people who did eat {or are eating} it are "crazy", I just learned from an earlier age than most that processed foods were simply not "good" for you. 
I guess it is also coming from what I have been reading for school...about how "evil" processed foods are...because honestly, that's what they are...evil! They *wreak* havoc on our bodies and we just don't know it because we don't *see* it. I think it is very important in today's day and age to feed our children and ourselves with nourishing, good quality foods. Not crap! 
I could go on a whole big rant about processed foods and the company's and people that back them up but that is going to take way too long and I don't think anyone cares at this point on a Thursday morning. 
Like, is it the weekend yet?

I haven't posted a recipe in a long while so decided I will do that to start our Thursday morning. :) I need to figure something out for dinner tonight - something heeeealthy so I will peruse some of my bookmarks and see what I can come up with. But this next one looks and sounds pretty delish so thought I would share. 

Bon Appetit!


Crispy Fish Bake
Prep: 10 min / Total: 40 min / Makes: 4

Ingredients
1-1/2 cups instant white rice, uncooked
1-1/2 cups boiling water
3 cups frozen broccoli florets
1 can {10 fl oz/284 mL} condensed cream of mushroom soup
1/2 cup water
1 cup Kraft Double Chedder Shredded Cheese
4 frozen breaded fish fillets, such as sole, haddock or cod {about 12 oz}

Directions
PREHEAT over to 400°F. Spread rice in 8-inch baking dish. Pour boiling water over rice. Cover with plastic wrap. Let stand 5 min. Uncover.

ARRANGE broccoli over rice. Mix soup and water; pour over broccoli. Sprinkle with half of the cheese. Top with fish; sprinkle with remaining cheese. 

BAKE 30 min. or until fish flakes easily with fork.
Simple enough! 
I am not sure how I feel about "baking" rice...but I might give it a shot...or I might just tweak the recipe around a tad. We shall see. But it sounds good enough!

You know what day it is today!?!!
Tuesday!!!
Lol.
That meeeeans...NEW MAGAZINE DAY!!
I have been in total magazine withdrawal...being on the trip, not finding the ones I want and packing and everything. I need something to read one of these nights to unwind with a big cup o'tea! 
Okay that is enough. 
Anyways! A little update with what is going on. Lots is going on. We have been packing and slowly getting ready for our big move which is one week from tomorrow. We are super excited. But there are lots of things we gotta do that are a tad overwhelming. We are grateful to the people that are helping us as well. :)
I have been also trying to get back into the groove of things as last week was the slowest week of life. It always is when you get back from vacation - and I sooooo miss California. 
I miss my parents and Oskar oodles. 
I plan on moving to Cali. ;) 
Other then that...blablabla...I just figured I would give you all an update that read daily. 
Now I go on my magazine websites to see who is on the cover for this month...

I am in serious magazine withdrawal mode. 
I don't even know what is new anymore, lol. I do know there are a bit of new fitness ones out there that I am eager to get my hands on. I no longer get the fashion ones as everything I wanna look at is online. But with fitness mags, that information will always stick. It isn't a trend. It's health, wellness and the like. That is why I keep on wanting them and getting them.
Anyways...here are some style hits since we are overdue with that shtuff.

The sweetest boys on Earth. <3 font="">


I AM BACK!!!
Okay, now where did I go? Welllll...if you have been listening to me all along you would know I want to the ever-gorgeous California to visit my Mom and Dad with Travi and Lou'e. 
I must say, two weeks is not enough time whatsoever. The time always goes by so very quickly and leaves me with heartache as I leave. I really love it at home where my parents are and California is just amazing in general. Which has led me to thoughts of actually moving there in the future. Believe it or not; King-Man even said he wouldn't mind moving there, as long as all our ducks are lined up in a row. :) 
The trip overall was fantastic. 
We didn't go sight-seeing or anything because we have seen everything around that area so we chilled at home for most of it. As well as in the backyard. Honestly, it was so much fun. Sitting out in the sun and reading all day ~ who wouldn't love doing that for two weeks straight? Of course there was some shopping that went on, delicious dinners, movie-watching, Game of Thrones, long baths, rainy days and many sunny ones. 
I really miss my Mom and Dad, they are two of the most amazing people ever. 
The flights were all awesome and Lou'e did amazingly on them. He also found a best friend and big "brudder" in Oskar. Lou'e followed him around everywhere and even picked up a few things that he did as well. Lol. 
It was honestly an amazing time and I wish it were longer, or I wish I lived there. Haha. 
So now it is back to the grind. As well as back to packing since we are moving in TWO WEEKS!!! The next little while is going to be uber hectic and probably overwhelming at times but I am very excited to start this exciting new chapter of ours. :)
