I am one lucky girl when it comes to sharing the remote with the boyfriend...to be honest, if I don't get my way sometimes I just pout...and he ends up throwing the remote at me anyways...but the thing is, he is pretty easy going. He will watch anything! He does get annoyed if I turned America's Next Top Model on though...but ever since I lived at home my go-to channel was the Food Network. It is my favorite. It's therapeutic, if you will. I just love watching it. Probably because I love food. Lol. So about two years ago, we began to watch it religiously. It is on in the mornings when we wake up, and on at night when we go to sleep. We can even watch HGTV together, Slice, A&E and Spike. We usually both agree as to what to watch. So thank goodness on that one!
Right now we are watching it; Diner's, Drive-In's and Dives. :)
Anyways...I was going through the Everyday Food magazine; the November 2011 issue, and there was a delicious Greek-style recipe in there that we both would want to try so that is probably going to be on the menu this week.
By the way, the both of us are going to cheer each other on with regards to eating healthy and being more active. This is a lot easier than doing it on your own. So I am excited.
Tomorrow we will have Thai soup and then we will sit down and go through some cookbooks and magazines and decide on the week's meals. So that will be nice - do something together to work towards our health.
I am also excited about making my own tzatziki sauce and incorporate it into more meals...especially since it is quite healthy as well. :)
So here is a recipe that we will try out and are excited to give a shot.

Greek-Style Chicken with Pickled Onions, Tomatoes, and Tzatziki
Serves 4 : Active Time: 35 minutes : Total Time: 35 minutes
Ingredients
1 medium red onion, thinly sliced
2 tablespoons red-wine vinegar
Coarse salt and ground pepper
3 boneless, skinless chicken breasts {1.5 pounds total}, cut into 1-inch pieces
2 teaspoons finely grated lemon zest, plus 4 teaspoons lemon juice {from 2 lemons}
2 teaspoons dried oregano
1/2 English cucumber, halved crosswise and thinly sliced
2/3 cup nonfat plain Greek yogurt
1/4 cup chopped fresh parsley leaves
4 teaspoons extra-virgin olive oil
1 pint grape or cherry tomatoes, halved {2 cups}
Cooked long-grain white rice, for serving
Directions
1. In a medium bowl, combine onion and vinegar; season with salt and pepper. In another medium bowl, combine chicken, lemon zest, and oregano; season with salt and pepper.
2. In a third medium bowl, make tzatziki: Combine cucumber, yogurt, parsley, and lemon juice; season with salt and pepper.
3. In a large nonstick skillet, heat over medium-high. Add chicken and cook until golden brown and cooked through, about 10 minutes. Add tomatoes to pickled onions and serve with chicken, tzatziki, and rice.
In a pickle...A short soak in a vinegar bath mellows red onions and turns them sweet and spicy. They make a great compliment to juicy bites of chicken and the cool salad called tzatziki.
Try This...Serve this meal with warm pita or other flatbread instead of rice if you like.
{Per serving (without rice): 300 cal; 10g fat (2g sat fat); 40g protein; 12g carb; 2g fiber.}
