I've seen this recipe idea in a few magazines/books and websites...never really thought to try it, especially since it is so healthy. Who would have thought to make "chips" out of a vegetable other than a potato - and a leafy green one to boot!
So I am going to share this kale chip recipe that I found on the Good Housekeeping website.

Kale Chips
From Good Housekeeping - triple-tested at the Good Housekeeping Research Institute.
Our crisp kale "chips" are virtually fat free - perfect for guilt-free snacking. Try them with our Low-Fat Buttermilk Ranch.
Prep Time: 10 minutes
Cook Time: 12 minutes

Calories per serving: 15
Ingredients
1 bunch{es} {10-ounce) kale, rinsed and dried well
Nonstick cooking spray
1/2 teaspoon{s} kosher salt
Directions
Preheat over to 350 degrees F.
From kale, remove and discard thick stems, and tear leaves into large pieces.
Spread leaving in single layer on 2 large cookie sheets. Spray leaves with nonstick cooking spray to coat lightly; sprinkle with salt.
Bake kale 12 to 15 minutes or just until kale chips are crisp but not browned.
Cook on cooking sheets on wire racks.
Easy peasy-lemon squeezy.
Some variations though that I would use is evoo {extra-virgin olive oil} instead of the cooking spray and I might sprinkle some minced garlic over it as well. :)
