Over the weekend King-Man and I went apartment hunting since in a couple of months we have to move out. It's all very sudden and it doesn't give us enough time at all to cross our t's and dot our i's but at the same time we see it as a blessing. In a way where we can begin a new chapter in our lives. I am ready to move out of the basement. I need sunlight! Lol.
We are excited to start new. We have been stuck in a rut for a long while now. Doing the same old thing over and over. We needed a kick in the ass, even though a little more time would have been nice; it's okay. We can make due.
I am so grateful for my parents being there to help us as well, and King-Mans Mom is going to be helping him as well. Or else I am not sure what we would do. You need a bit of help here and there to get on your feet and to be honest the last few years we have been crawling.
We saw one apartment-condo that was rather nice. Saw a few different layouts but it didn't seem right. Not the right fit for us. Even though it was nice. But...we had another place to go to. This place we saw pictures of and were totally putting this place on a pedestal and man, we were not disappointed. This place is gorgeous and as much as we would love to buy we aren't ready to yet.
This apartment is everything and more. It's huge and cheaper then a lot of the places we have seen. It has a gorg kitchen (with an island, Mom!) and a dishwasher!! The views are amazing in all of them and it has a fireplace!! The rooms could be a bit bigger but we will have to deal with it. The bedroom will just fit. I am so excited to start the process of getting this place this week. It really is amazing.
We can paint! Have pets! We have a huuuuge balcony. I love it! Well, we both love it.
It's in a different city but that's okay with me. The view in itself makes me want this place. It's...gah! I am so damn excited!!
So there ya have it. What we did on the weekend. Other then me being sick for half of it. Which is totally random but I hope I feel better soon. I am so rundown. Lots of things going on so it's stressful.
We had a pretty good weekend overallish. Hopefully the next one is better. It's going to be our six year anniversary on Saturday. Wow six years. What better way to spend it then to drop off our first and last months rent in! Ha!

Eating healthy can prove to be a tad difficult at times...after working all day and being up since 5am when 5pm hits and it's time to go home you just want to relax and dig into some good ol' comfort food. Piping hot chili with cheese, or spaghetti, or mashed potatoes. My mouth is watering and stomach is grumbling.
But healthy eating can be fun and delicious as well and when I saw this recipe, it just embodies it all. I will definitely be trying this out *soon*.
So here it is!

Buffalo Chicken Quinoa Salad
Prep: 5 min // Cook: 20 min // Total: 25 min
INGREDIENTS
*Salad*
1 cup quinoa
2 cups water
3/4 pounds boneless skinless chicken breast, cut into bite-size pieces
1 cup broccoli florets
3/4 cup shredded carrots
3/4 cup shredded cabbage
1/2 cup blue cheese crumbles, plus more for garnish
4 green onions chopped, save half for garnish
*Dressing*
1/2 cup olive oil
1/2 cup olive oil
1/2 cup hot sauce {I recommend Franks}
1 teaspoon seasoned salt
1 teaspoon seasoned salt
INSTRUCTIONS
In a fine-mesh strainer, rinse quinoa well and drain. In a medium pot, combine quinoa and water. Bring to a boil, then cover and turn heat to low. Cook until all the water is absorbed, about 20 minutes. Remove from the heat, fluff the quinoa with a fork.
While the quinoa is cooking, make the buffalo sauce dressing and cook the chicken and broccoli. In a measuring cup or small bowl, combine the olive oil, hot sauce, and seasoned salt. Whisk to combine. Set aside.
Heat a medium size skillet over medium high heat. Add a tablespoon of olive oil and sauce the broccoli for about 5 minutes. You want it to just start to soften, but still be crisp. Remove from the pan and set aside. Add the chicken to the same pan and cook the chicken for about 5 minutes or until cooked through. Add 1/4 cup or so of the buffalo sauce and cook until the chicken absorbs the sauce.
When the quinoa is ready, add the chicken, broccoli, carrots, shredded cabbage and as much of the dressing as desired {I ended up using all of the dressing, but we like things extra saucy} toss well. Add the blue cheese and half of the green onions. Toss again and serve warm with extra blue-cheese crumbles and green onions.
