Wow, I'm on a roll here posting all these editorials and recipes! Lol. But, that is a good thing of course. :)
Another recipe for you today! I found this on the canadianliving.ca website, once again, but you can also find this recipe on the Campbell's website as well.
I saw this recipe and it instantly intrigued me. It sounds absolutely delicious.
Pasta is not exactly the most healthiest thing to eat on a regular basis and like a farmer.
That's what my Mom says. I can eat like a farmer...or feed a couple people army-size portions. Obviously what I am getting at here is that I need to learn portion-control and I am pretty sure no one cares so I don't know why I keep talking about it. Haha.
Anyways...this recipe definitely calls in for some portion-control even though you may be running back for more, but what the heck, if you're living a healthy and active lifestyle on a regular basis then of course you should indulge. ;)

Chicken and Bacon Farfalle with Spinach & Mushrooms

Prep Time: 10 minutes
Cooking Time: 20 minutes
Per Serving: 390 calories

Ingredients
2-1/2 cups (600 mL) uncooked whole wheat farfalle (bow-tie pasta)
1/2 tbsp (7 mL) canola oil {I personally would use evoo}
1 lb (500 g) boneless, skinless chicken breasts cut into chunks
1 pkg (8 oz/227 g) baby bella (crimini) mushrooms
1 cup (250 mL) orange pepper chunks
4 cups (1L) packed, fresh baby spinach leaves {I'm sure you can use frozen - but thaw out!}
1 can (10 oz/284 mL) Campbell's Condensed Cream of Mushroom and Garlic Soup
1/3 (75 mL) cup water
1/3 cup (75 mL) crumbled, crisply cooked bacon
1/4 tsp (1 mL) freshly ground black pepper


Preparation
Cook farfalle according to package directions, omitting salt. Drain and set aside, keeping warm.
Brown chicken well in heated oil in large non-stick skillet at medium-high heat. Add mushrooms and orange pepper. Cook for 3 minutes, stirring often. Reduce heat to medium-low.
Stir in soup and water, then spinach. Heat just until bubbling, stirring occasionally. Reduce heat to low and simmer for 2 minutes.
Combine gently with farfalle, bacon and black pepper in serving dish. Serve immediately.


Additional Information
Tips:
Additional fat comes out of bacon when it is crisply cooked. Whether bacon is cooked on the stove top or in the microwave own, drain away the fat or allow it to be absorbed on food-safe paper towels.
A saucy one-dish meal loaded with vegetables! Baby bella mushrooms, the younger immature form of the popular portobella mushrooms, have a stronger, nuttier flavour than white mushrooms.
