::creamed:spinach::

Well it is the weekend and I am grateful for all my new followers. :) Hello everyone! I hope you're enjoying the blog so far. I've been doing this for over a year now so there is lots on the go here. Lots of health tips, recipes and a tun of editorials. I usually can never find blogs or sites that have gorgeous fashion editorials so I decided to start one myself. 
That's a little background on the Globetrotter blog.

Now...it's quite a cool Saturday morning, it is supposed to be quite a sunny day and tomorrow we are to get rain. Which isn't too bad because that means being super lazy in bed, watching Food Network, snuggling and reading good books. 
Today is going to be a day filled with running errands, grocery shopping and a Leaf game. :) Woohoo!
I've been cleaning like a mad woman this morning and a lot of it is done. I am just waiting for some laundry to dry before I go for a shower and get ready for the day. 
I'm currently just perusing the latest issue of Shape with Lisa and Mehmet Oz on the cover. I must say, Dr. Oz is incredibly adorable. :) I have seen his show a few times and he is quite charismatic. The article in there is interesting on how to keep a relationship alive after so many years of being with your significant other. 
Near the end of the issue - since it is a November issue - there are some tips and tricks and recipes for Thanksgiving. So I decided to share a recipe that I found in there for creamed spinach. I have never personally dried this but from what I can see from the picture in the mag it looks like it would be a fabulous side to turkey and mashed potatoes. :) Who know's, maybe I might try it next weekend {or the next one after that} when I make my turkey. 
I have never really dabbled too much with spinach. I have had it raw, in a spanakopita and a dip but that's pretty much it. It's packed FULL with good for you shtuff so it might be a good idea to play around with this veggie more often!

Creamed Spinach
Recipe taken from Shape Magazine, November 2011, PG. 130

Nutrition score per serving:
{1/2 cup}: 138 calories, 10g fat {0g saturated}, 8g carbs, 6g protein, 4g fiber, 165mg calcium, 4mg iron, 503mg sodium.

Ingredients
2 pounds fresh spinach, tough stems removed
8 ounces silken tofu, coarsely chopped
1/2 cup reduced-fat vegan mayonnaise
1/2 teaspoon minced garlic
1 tablespoon chopped fresh flat-leaf parsley
1 tablespoon fresh lemon juice
1 tablespoon extra-virgin olive oil
1 teaspoon sea salt
1/2 teaspoon freshly ground black pepper

Directions
1. Bring a pot of salted water to a boil over high heat. Add spinach and cook for 2 minutes. Drain in a fine-mesh strainer, pressing with a large spoon to release as much water as possible. Finely chop spinach and transfer to a large bowl. 

2. Process tofu, mayonnaise, garlic, parsley, lemon juice, oil, salt, and pepper in a blender or food processor fitted with a metal blade until smooth.

3. Pour tofu mixture into a medium saucepan and gently cook over medium-low, making sure mixture doesn't boil. Once warmed through, remove from heat, pour over spinach, and gently mixed together. 
Serve immediately.


Alright...so I obviously didn't read the recipe before I began posting...because there is tofu *barf* in there...I hate tofu...or maybe it's because the first time I tried it it was just absolutely horrendous and tasted like a sponge. BLEH!
I don't know...I hear it's healthy and everything for you, but I'm not a vegetarian...and I am also probably not going to use vegan mayo either. 
But who know's I might give it a shot...or I might find a more "traditional" creamed spinach recipe...if I do, I'll be sure to post that one up on here as well. 
Oh well, I tried. Lol.
