::quinoa:and:bean:soup::

The healthy recipe planning is a little difficult for me today. For some reason I can't concentrate or find recipes to my liking. I did find one though...a soup/quinoa concoction that can be found on the Chateleine website. Thanks to Twitter friends for telling me about this site and about quinoa! I used to cook a lot with quinoa and than totally forgot all about it. 
Quinoa is also very healthy for you so this recipe packs quite a punch with regards to it being healthy and light. Especially when you're trying to lose some poundage. 
So enough rambling and here is the recipe. :)

Hearty Quinoa and Bean Soup
Prep Time: 10 minutes | Cooking Time: 20 minutes | Makes: 4 servings

Ingredients
1 tbsp vegetable oil
1 onion, chopped
1 carrot, diced
2 garlic cloves, minced
1 tsp cumin
1 tsp ground coriander
1/3 cup dry quinoa
2 cups vegetable broth
540 mL can white kidney beans, drained and rinsed
2 cups baby spinach

Directions
1. Heat a large saucepan over medium. Add oil, then onion. Cook until onions are soft, about 3 minutes. Add carrot, garlic, cumin, coriander and quinoa. Cook for 2 more minutes. 
Pour in broth and 2 cups water. Bring toa boil, then reduce heat to medium-low. Simmer partially covered, until quinoa is cooked, about 15 more minutes. 
2. Stir in beans and spinach. Cook until beans are hot and spinach is wilted, 2 to 3 ore minutes. Serve immediately. 

Prep Tip
No need to chop the spinach. Just toss it into the simmering soup and it wilts perfectly.
